Whilst this is happening, I zapped some cubed sweet potato in the microwave for about 3 minutes. I also put my fresh pasta into the water I was bringing to the boil - I chose to use some delicious spinich and ricotta filled tortellini - one of my favourites. I guess you could use dried pasta, but the beauty of the fresh pasta is that it only takes a couple of minutes to cook.<br /><br />I added the potato to the frying pan and gave it a quick stir. I then added about half a small jar of this yummo pesto I found in the supermarket - roasted capsicum, cashew and basil - I chose this just to be different. I have used just straight basil pesto in the past and it has also been excellent.<br /><br />Finally, some cream. I dont't know how much - probably about 200ml, I just slosh it in until it looks right. If I put too much in, I just let it cook off a little bit, it seems to thicken by itself.<br /><br />The last step (see I told you it was quick) is draining the pasta and adding it to the frying pan. The best thing about this is that you can add whatever you think will taste nice together. Toasted pine nuts are always a good addition. Pumpkin works just as well as sweet potato, and you could add some broccoli or peas for something different in the veggie department. I was sitting out there this morning and all was fine. I went for a wicked bike ride - along the main road and down to the beach. I dipped my toes in the ocean - it was surprisingly pleasant, a couple more weeks and it will definately be swimmable! I came back along the main road and down to the river mouth, took a detour across the wetlands and climbed up the hill back to home - great! Then I sat in the sun again and had a sandwich, a little bevvy and read the paper. I am the eldest born of 7 kids - 5 of which are my half brothers and sisters, the youngest being 21 years younger than me.<br />2. I went to a total of 9 schools whilst growing up - I moved schools 10 times but went to the same school twice<br />3. I won our local bonnie baby competition 2 years in a row when I was a baby (I'm sure my cuteness would have won it again for me the next year, but babies in the competition had to be 2 and under)<br />4. I have worked in a butcher shop for the last 6 1/2 years - and yes I am beginning to get a bit sick of people asking me if I enjoy handling meat (that's a bit rude isn't it?!)<br />5. Mmmmmm, it's making my mouth water as I think about telling you what's in it!<br /><br /><span style="font-weight: bold;">Chocolate, Caramel & Peanut Slice</span><br /><br />Melted butter, to grease<br />190g (1 1/4 cups) self-raising flour<br />70g (1/3, firmly packed) brown sugar<br />120g butter, melted<br /><br />Caramel Filling<br /><br />1 x 395g can sweetened condensed milk<br />70g (1/3 cup, firmly packed) brown sugar<br />60g butter<br /><br />Chocolate & peanut topping<br /><br />150g (1 cup) unsalted raosting peanuts<br />300g good-quality dark cooking chocolate, coarsely chopped<br />80ml (1/3 cup) thickened cream<br /><br />1. Preheat oven to 180 degrees C. Brush a 13 x 30cm loaf pan with melted butterto lightly grease. Line the base and 2 opposite sides with non-stick baking paper, allowing the sides to overhang.<br />2. To make the biscuit base, combine the flour and sugar in a medium bowl. Add the melted butter and stir till just combined. Spoon the mixture into the prepared pan and press firmly over the base. Bake for 20min or until just golden.<br />3. Meanwhile, to make the caramel filling, combine the condensed milk, sugar and butter in a medium saucepan over low heat. Cook, stirring constantly with a wooden spooon, for 8 minutes or until the caramel thickens (do not let the mixture boil).<br />4. Pour the hot caramel over the biscuit base. Bake in the oven for 15 minutes or until the caramel begins to bubble. Set aside for 1 hour to cool slightly.<br />5. To make the chocolate and peanut topping, sprinkle the caramel evenly with peanuts. Place the chocolate and thickened cream in a medium saucepan over a low heat and stir with a metal spoon until the chocolate melts and the mixture is smooth. Pour the chocolate mixture evenly over the peanuts and use a round blade knife to smooth the surface.<br />6. Place in the fridge for 1-2 hours to set. Cut into 16 pieces to serve.<br /><br />You can omit the peanuts if you don't like them or are allergic - I have made this without them and it was just as yummy.<br /><br />I also usually double the mix and make a bigger batch because we are greedy and love this so much - 16 small pieces is just not enough! I am currently waiting on a package in the mail which has got some wire and other stuff in it that I am really looking forward to getting into.<br /><br />In home news, things with the dogs are coming along nicely, they are pretty much best friends now and have been spending the day together and sleeping outside at night time together too.<br /><br />On a final note, the job scene might be looking up for me. I had an interview the other week and I'm waiting to hear back about it. Since I'm in Australia we are just about to start summer as opposed those in the northern hemisphere who have just seen the last of it - and boy can't I wait!! We still have to get through spring though, but that's ok, because spring is almost summer, and I don't mind the anticipation.<br /><br />So, I am going to take some liberty with the requirements of this blog carnival and change it around a bit. I have sort of an excuse this time though. I have been totally preoccupied with the new addition to our family. I think adding this new puppy has put me off having children for life!<br /><br />Well we got Orion home and got him settled in (sort of). He still wouldn't sleep by himself and was being a bit of a pain in that respect, but Ghost seemed to be accepting him and Orion seemed to be getting used to his new family members also. Then on the Tuesday after we brought him home, Ghost was really mean and bit Orion - quite badly - broke his jaw and we had to spend a fortune at the vet to get him fixed (I also had to out up with several people asking me if spending that much money was really worth it - I said yes, sorry it is, just because he's a dog doesn't mean that he doesn't deserves to be put down just because it might cost a little too much to do anything else)<br /><br />So now he is pretty much all better and for the last couple of weeks we have been stressing our little heads off about what is going to happen and that they were going to hate each other and fight for the rest of their lives!<br /><br />But things are going really well - they are almost inseparable - Orion just wants to play with Ghost all the time, it is really exhausting making sure that everything is alright all the time!<br /><br />I have been neglecting everything - I have been going to write an article for the DUST blog (which I have finally just done), I have been wanting to make some more things - I haven't sat down with my beads since before Orion arrived! I have also left it really late to write my blog posts for the blog carnival and the EtsyBloggers feature article - I will be doing those straight after I do this!<br /><br />I think it is all going to calm down soon, Orion and Ghost are getting on very well and I can actually leave them together for longer than 5 minutes without pulling my hair out with worry - hopefully tomorrow I will get into some of that beady goodness that I have been missing - I need to get some new things up on Etsy too - if there is anyone out there who pays any attention to my shop will be starting to get sick of the fact that I never add anything new - renew, renew, renew has been the call lately!<br /><br />So off to it I go.......Tracyhttp://www.blogger.com/profile/08936459144938126249noreply@blogger.com0
